Egg Whites substitute for Whole Eggs
This recipe for Cheesy Egg Bites works great with egg whites or whole eggs. If you want even more protein, you can opt for egg whites. 1/4 cup of egg whites is equivalent to one large egg. For this egg bites recipes that calls for 12 eggs, you can use 3 cups of egg whites instead.
When using whole eggs, these egg cups have 15g of protein in each one. If you use egg whites, they will have an additional gram of protein in each egg bite.

What if I don’t like cottage cheese?
If you are not on team cottage cheese, you have two options. You can leave it out all together, but that does reduce the protein by over 2g per egg bite. The other option, which I would recommend, is adding the eggs and cottage cheese mixture to a blender and smooth it out.
This will eliminate any little chunks of cheese you may find in the egg cups, which will make the egg cups appealing to everyone who doesn’t love the texture of cottage cheese. To be honest, you really don’t notice much of the cottage cheese at all after they are baked. Take a peek at the photos and you will see they are hard to find!
How to Make Cheesy Egg Bites
For this simple five ingredient recipe for cheesy egg bites comes together in just a few minutes. Here is what you will need.

- Cottage Cheese
- Dijon Mustard
- Sharp Cheddar
- Salt & Pepper (optional)
- Italian Seasoning (optional)
Whisk the eggs and a large bowl and add in the ham, cottage cheese, mustard, salt and pepper. Stir until well combined.
Spray a muffin tin with non-stick spray and add 1/3 cup of the ham and egg mixture to each cup. Top each egg cup with 2 Tablespoons of shredded sharp cheddar. Sprinkle the tops of each cup with your favorite seasoning or Italian herbs.
Bake the egg cups at 350F for 20-25 minutes until the eggs are completely set. Carefully remove from the hot pan and enjoy!

Enjoy the cheesy ham and egg bites all on their own, or drizzled with your favorite sauce. I love mine topped with some Sriracha. They are also great sandwiched between an English muffin.

Allow the egg bites to cool to room temperature and store in an airtight container for up to 5 days.

When it comes time to reheating your egg cups for a quick breakfast or lunch, pop them in the microwave. Heat one egg cup or 60 seconds. Two egg cups will need 60-90 seconds to heat them through.
What kind of cheese to use
I opt for sharp cheddar in these egg bites, but plenty of different cheeses would work great. Gouda, Mozzarella, or most semi-hard cheese will work very well. Soft cheese like goat cheese and feta would also be delicious with the addition of some sautéed vegetables.
Can I use leftover Ham
I like using deli ham in this egg bite recipe because you can easily chop it into small pieces. Leftover ham will work as well, but I recommend making sure to dice it up into small pieces. I just don’t love a big chunk of ham in my egg bites.
What seasoning to use
You can use just about any seasoning with eggs, as they are extremely versatile. A pinch of some Italian seasoning or a specialty blend of spices, like this Over Easy spice blend from Spiceology. You can’t go wrong with a good selection of Spiceology spices!
