Strawberry, Gorgonzola & Walnut Salad

Loaded with 15g of protein and 7g of fiber in each serving, this Strawberry & Gorgonzola Quinoa Salad is no lightweight, it will fill you up and excite your taste buds all at the same time! Sometimes I am just craving a salad and one of my favorite salad additions is fresh fruit. With the delicious red strawberries in season right now that are so sweet, I want to make every meal with them! The problem with that, is that some lettuce, strawberries and dressing isn’t going to fill me up for more than an hour tops! With the hearty addition of walnuts and quinoa in this salad, it has some serious staying power.Strawberry & Gorgonzola Quinoa Salad - Krafted Koch

I am a really lazy cook most weeknights, and many times after an 8-10 day at work, I just want to eat ASAP and not wait around for something to bake in the oven or even quinoa to boil on the stove top. That is why when I do make a dish with quinoa, such as this Asparagus & Feta Quinoa Salad,  I make a little extra. After it is cooked and cooled, I portion out a couple of small freezer containers with the quinoa and pop it in the deep freezer for a lazy night like last night! I just took my 1 cup portion of cooked quinoa out of the freezer and popped it in the microwave for 30 seconds and it was ready to go!Strawberry & Gorgonzola Quinoa Salad - Krafted Koch

With the pre-cooked quinoa, this salad comes together in a matter of minutes and it is so unbelievably satisfying and flavorful. If you aren’t a fan of the more pungent Gorgonzola cheese, feel free to substitute feta or goat cheese, for a milder taste or even shaved Parmesan if you aren’t a fan of soft cheeses. I mean, I guess you could just go without cheese, but that is just unheard of in my kitchen!

 

Not only does this make a great weeknight dinner, it is also fantastic to pack up for lunch the next day!

Strawberry & Gorgonzola Quinoa Salad

A protein packed salad with fresh strawberries and tangy Gorgonzola.

Ingredients

  • 10 c. mixed greens
  • 1 pint strawberries sliced
  • 1/2 c. Gorgonzola crumbles
  • 1 c. walnuts
  • 1 c. cooked quinoa
  • 2/3 c. raspberry or strawberry vinaigrette

Instructions

  • Toss everything together in a large bowl so the dressing evenly coats the entire salad. Serve immediately.
