Sriracha Bacon Bleu Cheese Breakfast Toasts

For this particular breakfast, we started out with lots of healthy things like scrambled eggs and sauteed spinach on whole wheat toast. Then we loaded on the flavor! A strip of crunchy bacon, a few bleu cheese crumbles and a little bit of sriracha finish off this breakfast for a complete meal loaded with bold and spicy flavor! For an even lighter breakfast, swap in some turkey bacon, you won’t be disappointed!
Yesterday, my husband and I decided to head to town and do a little bit of bowling. We played three games and needless to say, he wasn’t able to break 100. While he is a great athlete in many regards, bowling is just not his thing.
After bowling we headed over to my parents house to visit. We played some Carbles and my mom and I kicked my dad and husband’s butts! As we were hopping in the car, about to head home, my husband jokingly says, “This is why I never play games with you, you never let me win!”. HAHAHA Well he should have known that I don’t let anyone intentionally win games a LOOOONG time ago! Poor boy… 😉
- 1 clove garlic, minced
- 6 eggs
- ¼ c. skim milk
- salt and pepper to taste
- 1 c. baby spinach
- 3 slices whole grain bread, toasted
- ¼ c. bleu cheese crumbles
- 2 Tbsp. srirach
- 3 slices thin bacon, cooked
- In a large non-stick skillet, add the garlic, eggs, milk salt and pepper. Saute over medium-low heat, stirring constantly, for 4 minutes. Add the spinach and cook an additional 1-2 minutes, until the spinach is wilted.
- Top each slice of toast with a third of the egg mixture, bleu cheese, sriracha and bacon. Serve immediately.
