Smoked Sausage Triple Grilled Cheese is an amazing sandwich with juicy sausage and creamy gouda, cheddar and cream cheese layered between two pieces of marble rye bread for a rich and gooey grilled cheese that will blow your mind! This masterpiece was born from some extra cheese, sausage and bread that I had leftover from a fondue we recently hosted for friends.
My friend Julie had never tried fondue before, so I thought it was the perfect opportunity to have her and her family over to check out our remodeled house. I took full advantage of all the counter space I had in my new kitchen as well as the strategically installed outlets installed on the sides of the cabinets, just for fondue.
Growing up we always enjoyed a big fondue dinner on Christmas Eve. It was such a good time that us kids wouldn’t even pester our parents about dinner being done yet so we could open gifts. We enjoyed Swiss cheese fondue with French bread and a variety of meats, donuts, cheese curds, etc. with the oil pots. As we got older and began bringing significant others home for the holidays, it was no longer practical to have fondue for Christmas. Sadly, there were simply too many people to fit around the dining room table.
When I was in Germany in high school, one of my friends Arne invited us over for a fondue, hosted by his mother. She put out lots of meats and vegetables and to my surprise broth. They didn’t use any oil or have pots full of cheese but it was still delicious. I loved the concept, so I was sure to incorporate both broth and oil into the fondue I was putting together.
I prepped all of the meat the night before by cubing up pork, chicken breast and steak into bite-sized pieces and marinating them in a variety of pre-made sauces. I used a ginger Asian sauce and teriyaki on the shrimp, barbecue for some pork, and a Heinz 57 marinade for the steak. I also thawed some shrimp, whipped up a batch of mini meatballs and sliced a large piece of smoked sausage. As I looked at all the food in the fridge I was thinking I needed to invite about 10 more people!
We enjoyed all of the meat cooked in our choice of a wine and broth mixture or hot oil and dipped in a variety of sauces. I made two different cheese fondues, the classic Swiss cheese as well as a zesty cheddar. Both were amazing and eaten up with cubed bread and sliced apples. Even Kinzee, Julie’s almost three year old daughter enjoyed the food. She was particularly fond of the biscuits cut up and fried in the oil and tossed in a cinnamon and sugar mixture to make donuts. Us adults were equally fond of them. 😉

When it was all said and done there wasn’t as much food leftover as I thought there would be. I did have a ring of smoked sausage, some marble rye bread and a variety of cheese left though. They were the perfect ingredients to whip up this delicious Smoked Sausage Triple Grilled Cheese for lunch the next day!

- 2 Tbsp. butter, softened
- 2 slices marble rye bread
- 6 inch piece of smoked sausage
- 1/4 c. whipped cream cheese
- 1/4 c. Gouda, shredded
- 1/4 c. sharp cheddar, shredded
- Spread one side of each slice of bread with a Tablespoon of butter.
- On the opposite sides of the bread, spread 2 Tablespoons of cream cheese and top with the shredded cheese.
- Slice the sausage into three pieces lengthwise and cook in a small skillet over medium heat for 2-3 minutes, or until heated through.
- Place the sausage on the cheese and bread and fold everything together, butter sides facing out.
- Place the sandwich in the same skillet over medium heat and cook covered on each side for 2-3, or until golden brown.
- Serve immediately
