We are back with another great week of healthy meals for you and your family! This weekend is Commencement for the graduates at the university I work at. I work the event each year with my office and it gets to be a long week after having just gotten through 12 hours days for finals week! Needless to say, meal prep is at an all-time high on my list of to-do during weeks like this. When I get home at 8pm, the last thing I want to do is worry about what I am making for dinner. Having a solid plan in place makes it much easier to stick to a healthy meal plan!
