Cornichon Goat Cheese Bites
Have you ever hear of Cowboy Sushi? Basically it is a piece of deli ham wrapped around cream cheese and a pickle. It is a very popular appetizer in my neck of the woods and my husband just loves it. After I had these amazing Maille Cornichons sitting in my refrigerator, it got me to thinking about how I could take the staple party appetizer the next level. That is how these gorgeous little Cornichon Goat Cheese Bites were born.
To get started I thinly sliced some quality salami and topped it with a whipped mixture of cream cheese, goat cheese and whole grain mustard. They are finished off with an adorable little cornichon and these easy but elegant appetizers are ready to go!
I was going for a low-carb finger food, but if that isn’t your concern, you could also place these on top of a crusty piece of bread or hearty cracker for something more substantial. Whatever you do, don’t skimp on the quality of ingredients. A simplistic recipe like this really let’s the high-quality ingredients shine, so stick to the good stuff. I went with Maille cornichons and mustard for a sure bet because I know they are always top notch!
Cornichon Goat Cheese Bites
Ingredients
- 8 oz. salami
- 8 oz. soft goat cheese
- 8 oz. cream cheese
- 2 Tbsp. whole grain mustard
- 1 jar pickled gherkins cornichons
Instructions
- Slice the salami into 1/8 inch slices.
- In a small bowl, beat the goat cheese and cream cheese until light and fluffy. Mix in the mustard.
- Top each slice of salami with 1 Tbsp. goat cheese mixture and one cornichon. Store refrigerated up to 2 hours or serve immediately.
