Cucumber Feta Bites
I love a good snack idea that is not only easy but healthy and tastes great. For this simple snack, I topped my favorite cracker, Sweet Onion Triscuits, with hummus, cucumbers and feta for a salty bite loaded with texture.
My sister and I were both just talking about how we can do so good throughout the day, making good nutritious choices when it comes to our food…and then we blow it all up at night. I love snacking too much. After I eat a full dinner, I am still craving something to munch on an hour later. Chocolate is normally at the top of the list of things I crave, but realistically I could go for just about anything at that point.
Sometimes I make smart choices like these Cucumber Feta Bites, but other times, not so much. Please tell me I am not alone with this late night struggle! I know when I keep lots of healthy options in the house I am more likely to make smart choices. Apart from that, do you have any great tips or advice to curb those after-dinner munchies?
- 24 trisciuts, I used the Sweet Potato & Sweet Onion flavor
- 1/2 c. your favorite hummus, I used Tribe tzatziki flavor
- 1 cucumber, peeled, seeded and finely diced
- 1/4 c. feta
- Top each Triscuit with a half Tablespoon of hummus. In a separate bowl, toss the cucumbers, salt and feta. Top each cracker with a spoonful of the cucumber mixture. Serve immediately.
