If  your holiday meals are anything like mine, your oven is overflowing with all of the hearty meats, sides, rolls, etc. I have a double oven in my kitchen in addition to an old oven downstairs as well as multiple crock pots. Let’s just say that when I was hosting Thanksgiving this year, they were all plump full. I love to have options for every part of the meal, but sometimes I need to plan side dishes and desserts that will free up the oven. This Antipasto Tortellini Pasta Salad is perfect for that.

A holiday side dish that can pair well with your main meal in addition to using with leftovers for a light meal of sandwiches and salads later is a win-win in my book. This pasta salad does just that. It is a delicious mix of cheese tortellini, thinly sliced meats, fresh vegetables, sweet basil, Parmesan and Mozzarella all tossed in your favorite Italian dressing.

I served it along with the turkey and ham for the main event and when the evening rolled around and we tossed together sandwiches and salads for everyone to munch on, this salad was a hearty side dish that everyone loved.

I went all out with this salad using quality ingredients. From the thinly sliced prosciutto and salami, or the fresh sweet basil, to the Crystal farms Parmesan and Mozzarella, this salad had it all going on!

Ingredients

  • 20 oz. pkg cheese tortellini
  • 3 oz. prosciutto quartered
  • 3 oz. thinly sliced salami quartered
  • 1/2 c. green olives sliced
  • 1 pint cherry tomatoes halved
  • 1/4 c. fresh basil chopped
  • 1/2 c. red onion diced
  • 1/4 c. yellow bell pepper diced
  • 1/3 c. peppercini chopped
  • 1 c. Crystal Farms shredded Parmesan
  • 8 oz. Crystal Farms Mozzarella cubed
  • 1 c. Italian vinaigrette

Instructions

  • Prepare your tortellini according to the package and rinse under cold water. Toss with the remaining ingredients and store refrigerated.
  • Before serving, add extra Italian vinaigrette if the salad is slightly dry.
