Ingredients

  • 2 c. shredded cheddar
  • 2 c. thawed hasbrowns
  • 1/2 c. onion diced
  • 2/3 c. cooked bacon crumbled
  • 2 eggs
  • 1/3 c. cream cheese whipped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. chilli powder
  • olive oil for frying
  • sour cream for garnish
  • chopped chives for garnish

Instructions

  • In a large bowl, mix the first 9 ingredients until well combined. Form into two inch balls and flatten with your palms to create a patty.
  • In a large non-stick skillet, add a Tablespoon of olive oill. When the oil is hot, add four patties to the skillet and cook for 3-4 minutes on each side until browned.
  • Repeat the process, adding oil each time, so the skillet is not dry.
  • Place the cooked patties on a paper towel and serve immediately with a dollop of sour cream and sprinkle of chives.
