- 1 French baguette sliced into 1/2" slices
- 2 Tbsp. olive oil
- 4 large yellow onions thinly sliced
- 1/2 tsp. salt
- 10 oz. Boar's Head Sharp Cheddar sliced 1/8" thick
- 15 slices procuitto
- 1 large apple
- 1 lemon juiced
- 2 1/2 Tbsp. fresh thyme roughly chopped
In a large skillet over high heat, heat your olive oil. Add your thinly sliced onions and salt and cook for 15 minutes, stirring frequently. Reduce your heat to low and cover with a lid. Cook for an additional 30-45 minutes, stirring every 5-10 minutes, until the onions are a dark caramel color and sweet in flavor.
Preheat your oven to 350°. Place your slices of bread on a lined baking sheet and top each slice with 2 Tbsp. of onions and a slice of cheddar. Bake for 5-8 minutes, just until the cheddar is melted.
Meanwhile, quarter and core your apple and slice into think 1/8" slices. As soon as you slice the apples, toss them with the juice of the lemon, so they don't brown. Cut each piece of prosciutto in half and wrap a half piece around each apple slice.
Top each onion and cheddar crostini with a prosciutto wrapped apple and sprinkle with 1/4 tsp. fresh thyme. Serve immediately.
