Freezer Waffle Breakfast Sandwiches

These Freezer Waffle Breakfast Sandwiches are an easy meal prep recipe with amazing flavor and texture! Bacon, egg and cheese are wrapped in a thin Nordic waffle made with Greek yogurt for a healthy and delicious meal in less than 10 minutes.

Ingredients

Waffles

  • 3 large eggs
  • 1/4 cup sugar
  • 1 1/2 cups skim milk
  • 1 cup plain whole Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/4 cup butter melted cooled
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Breakfast Sandwiches

  • 12 eggs
  • 6 slices sharp cheddar cheese
  • 12 slices baked bacon

Instructions

WAFFLES

  • Mix the eggs and sugar in a large bowl and stir in vanilla, milk and Greek yogurt. Add the flour, baking soda, baking powder, and salt.
  • Spray your heated Nordic Waffle Maker with non-stick cooking spray before cooking EACH waffle. Pour a scant 1/2 cup batter onto the waffle iron and close it. Cook for approximately two minutes per waffle, or until it is lightly golden brown.
  • Set the waffles on a baking sheet and fold them in half to crease them. After all the waffles are cooked, open them up so they can cool completely.

BREAKFAST SANDWICHES

  • Meanwhile, while the waffles are cooking, add the eggs to a 9x9 sprayed non-stick pan. Use a fork to crack each yolk. Season with salt and pepper and bake at 350F for 20 minutes, or until all the eggs are set.
  • When all the ingredients are cooled to room temperature, slice the pan of eggs in half. Slice 12 long strips of eggs from the pan of eggs.
  • Top each waffle with a piece of egg, half slice of cheese and one slice of bacon.
  • Slice the sandwiches in half in store in a resealable bag. Suck out all the air before sealing and storing in the freezer for up to 3 months.

Notes

Be sure to allow everything to cool to room temperature before freezing. Any heat in the food will result in trapped moisture in the bags and cause frost.
