These Freezer Waffle Breakfast Sandwiches are an easy meal prep recipe with amazing flavor and texture! Bacon, egg and cheese are wrapped in a thin Nordic waffle made with Greek yogurt for a healthy and delicious meal in less than 10 minutes.
Mix the eggs and sugar in a large bowl and stir in vanilla, milk and Greek yogurt. Add the flour, baking soda, baking powder, and salt.
Spray your heated Nordic Waffle Maker with non-stick cooking spray before cooking EACH waffle. Pour a scant 1/2 cup batter onto the waffle iron and close it. Cook for approximately two minutes per waffle, or until it is lightly golden brown.
Set the waffles on a baking sheet and fold them in half to crease them. After all the waffles are cooked, open them up so they can cool completely.
BREAKFAST SANDWICHES
Meanwhile, while the waffles are cooking, add the eggs to a 9x9 sprayed non-stick pan. Use a fork to crack each yolk. Season with salt and pepper and bake at 350F for 20 minutes, or until all the eggs are set.
When all the ingredients are cooled to room temperature, slice the pan of eggs in half. Slice 12 long strips of eggs from the pan of eggs.
Top each waffle with a piece of egg, half slice of cheese and one slice of bacon.
Slice the sandwiches in half in store in a resealable bag. Suck out all the air before sealing and storing in the freezer for up to 3 months.

Be sure to allow everything to cool to room temperature before freezing. Any heat in the food will result in trapped moisture in the bags and cause frost.
