Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old fashion oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 cup raisins

Instructions

  • Preheat oven to 375°F.
  • In a large mixing bowl, blend together the shortening and sugar until light and fluffy. Mix in the eggs and vanilla.
  • In a separate bowl, combine the flour, oats, baking soda, salt and spices. Give it a quick stir.
  • In a small bowl, add the raisins and cover with 1/2 cup of water. Microwave for 90 seconds.
  • Add the dry ingredients and the raisin water to the sugar and shortening mixture. Stir just until well combined. Mix the raisins into the dough.
  • Scoop the cookies onto a greased baking sheet. Bake 8 to 10 minutes at 375°F until the cookies are just slightly golden brown on the edges. Do not overbake these or they will dry out.

Notes

If the dough is a little dry, add an additional tablespoons of water. This is necessary sometimes, because if you cook the raisins too long, more water is evaporated and there may not be quite enough.
