Ingredients
2tablespoonsbutter
1 1/2cupsuncooked jasmine rice
1/2cupGreek yogurt
1/4cuplemon juice
1/4cupchopped parsley
2cupschicken broth
1poundchicken breastcubed
salt and pepper
Instructions
Preheat oven to 375F.
In a 9x13 inch baking dish, add the butter, rice, Greek yogurt, lemon juice, chicken broth, parsley and rice. Mix all together and top with the chicken. Season the chicken with salt and pepper.
Bake uncovered for 30-35 minutes, or until the chicken and rice is cooked through.
Remove from the oven and allow to rest for 5 minutes. Fluff the rice with a fork, garnish with parsley and lemon slices.
Notes
Garnish with feta cheese, diced tomatoes or a dollop of tzatziki for even more flavor.
