Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup olive oil
  • 2 Tablespoons white balsamic vinegar*
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • pinch of black pepper
  • 1 small Shallot finely diced (1 1/2 Tablespoons)

Instructions

  • Add the pineapple juice, olive oil, vinegar, honey, salt and pepper to a blender. Blend until smooth.
  • Mix in diced shallots.
  • Store refrigerated for up to 10 days. Shake well before serving.

Notes

*Substitute white wine vinegar, champagne vinegar or balsamic for white balsamic vinegar. Adjust honey and vinegar to taste.
