Ingredients

  • 2 large peaches
  • 2 pints cherry tomatoes
  • 1 package fresh mozzarella pearls
  • 16-24 leaves fresh basil
  • 1/4 cup balsamic glaze
  • OPTIONAL - lemon juice

Instructions

  • Peel the peaches and slice in half. Remove the pit and slice each half into four slices. Chop each slice into three parts. You can optionally toss the peaches with a very little bit of lemon juice to keep them from browning.
  • Tear each basil leaf into 2-3 pieces.
  • Assemble each skewer by placing one cherry tomato, one mozzarella ball, one piece of basil and one chunk of peach on each toothpick.
  • Store the skewers covered tightly with saran wrap until ready to serve. Drizzle with balsamic glaze right before serving. Enjoy!

Notes

This makes a large helping of appetizers. Feel free to divide the recipe in half for a smaller gathering.
