Apple Bundt Cake

A moist bundt cake studded with large chunks of tart apples for the perfect fall dessert!

Ingredients

  • 4 eggs
  • 1 1/4 c. vegetable or canola oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp. salt
  • 3 to 4 c. apples chopped in 1/2" pieces
  • 1 c. chopped pecans or walnuts

Instructions

  • Preheat your oven to 350° and grease and flour a bundt pan. Set aside.
  • In a medium bowl, beat the eggs, oil, sugar and vanilla until well combined. In a separate bowl, mix together the flour, soda, cinnamon, and salt. Combine the egg and flour mixture, being careful not to overwork the mixture. Fold in the chunks of apples and nuts.
  • Pour the mixture into the greased and floured bundt pan and bake at 350° for one hour. To test the cake, poke with a clean toothpick. If it comes out clean, it is done. If there is batter on the toothpick, continue to bake, checking every 5-10 minutes with a new toothpick.
  • Serve warm or at room temperature with a dollop of whipped cream.
