Sweet Potato Fries
- 2 large sweet potatoes
- Olive oil spray
- 1 teaspoon salt
Honey-Chipotle Dip
- ½ cup plain Greek yogurt
- 2 tablespoons honey
- ½ teaspoon chipotle powder
- ¼ teaspoon cinnamon
For the Sweet Potato Fries
Slice the potatoes into ¼” matchsticks. (peeling the potatoes is optional) Place the fries into a bowl of ice water while you cut the remaining potatoes.
Let the potatoes sit for 1-2 hours in the ice bath for the crispiest fries.
Remove the fries from the water and pat them dry with a paper towel.
Spray the potatoes lightly with olive oil spray and sprinkle with salt.
Add the fries to the air fryer and cook them at 400F for 12-15 minutes, shaking them half way through cooking. If you are using a smaller Air Fryer, cook them in two batches.
For the Honey-Chipotle Dip
Combine all of the ingredients in a small bowl.
Store in the fridge until ready to use.
It’s important not to crowd the sweet potato fries or you’ll end up with soggy French fries.
If you enjoy a sweeter fry, sprinkle the sweet potato fries with a little brown sugar and cinnamon as soon as you remove them from the Air Fryer
