Spiralized Apple Cranberry Salad
Spiralized Apple Cranberry Salad is an easy 10 minute recipe made with crunchy apples, cranberries, pecans and goat cheese all tossed in a light Citrus Poppy Seed Dressing, for a healthy and delicious side dish or vegetarian entree you will love!

- 1 red apple I used pink lady
- 1 granny smith apple
- 1/2 c. citrus poppy seed dressing
- 1/4 c. dried cranberries
- 1/4 c. golden raisins
- 1/4 c. crumbled goat cheese
- 1/3 c. pecans chopped and optionally toasted
Spiralize the apples and toss them with the dressing, and remaining ingredients. (If you don't have a spiralizer, simply cut the apples into matchsticks.)
Serve immediately or refrigerate for up to 1 hour.
NOTE: If you want to use store-bought poppy seed dressing, make a mixture of 2 parts poppy seed dressing to 1 part lemon or lime juice.
