Ingredients

  • Single pie crust
  • 4 oz. soft goat cheese
  • 3/4 c. shredded Parmesan divided
  • 5 eggs
  • 1 c. heavy cream
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 c. green onion chopped
  • 1 c. cubed ham
  • 2 Roma tomatoes

Instructions

  • Preheat your oven to 350°.
  • Press the pie crust into a greased quiche pan. Poke the bottom of the crust with a fork in three spots. Place on a cookie sheet and bake the pie crust for 15 minutes at 350°.
  • Spread the softened goat cheese over the par-baked crust and top with the Parmesan cheese.
  • Whisk the eggs, cream, green onion, ham, salt and pepper together and slowly pour over the ham and cheese mixture.
  • Slice the tomato into 1/4 inch thick slices. Arrange the slices around the edge of the quiche.
  • Bake for 45-50 minutes at 350° or until the eggs are set. The very center will still be slightly jiggly when moved, but will set as it rests.
  • Allow to rest for 10 minutes before serving.
