Ingredients

  • 1 lb. mild Italian sausage
  • 1 small yellow onion diced
  • 3 bell peppers your choice of colors, diced
  • 1 tsp. minced garlic
  • 1 2/3 c. brown Minute rice uncooked
  • 14.5 oz. can beef broth
  • 15 oz. jar marinara
  • 14.5 oz. jar fire roasted tomatoes
  • 2 tsp. Worcestershire sauce
  • 4 oz. Provolone cheese shredded

Instructions

  • In a large skillet over medium-high heat, saute the sausage for 3-4 minutes.
  • Add in the diced onion, garlic and bell peppers to the pan and cook an additional 5 minutes.
  • Add the beef broth, marinara, tomatoes and Worcestershire sauce. Stir in the Minute rice and bring to a boil. Reduce to low, cover and cook on low for 10-12 minutes. Stir half way through to ensure it doesn't burn on the bottom.
