- 1 c. sour cream
- 8 oz. cream cheese
- 1 oz. packet ranch seasoning
- 1-2 finely diced chipotles in adobo depending on spice preference
- 2 c. shredded lettuce
- 1 c. chopped tomatoes
- 1/4 c. finely diced red onion
- 1 cob sweet corn cut off the cob
- 4 oz. shredded pepper jack cheese
- chips for serving
In a food processor or a medium bowl add the sour cream, cream cheese, ranch seasoning and diced chipotles. Blend until smooth.
Spread the mixture over a large plate or platter. Top with the remaining vegetables and cheese.
Serve fresh with chips or store covered up to 6 hours before serving.
