Ingredients

  • 1.5 c. cooked chicken cubed
  • 1/2 c. strawberries sliced
  • 1/2 c. pineapple diced
  • 1/2 c. grapes halved
  • 1/2 c. pistachios shelled and roughly chopped
  • 1/2 c. non-fat plain Greek yogurt
  • 1/4 c. mayonnaise
  • 1/3 c. Citrus Poppy Seed Dressing
  • Butter lettuce for serving

Instructions

  • In a medium bold whisk the Greek yogurt, mayonnaise and poppy seed dressing. Fold in the remaining fruit, chicken and pistachios and serve 2/3 c. of the mixture in a leaf of butter lettuce. Enjoy immediately!
