Southwest Black Bean Burgers

- 4 MorningStar Farms® Black Bean Veggie Burgers
- 1 poblano pepper
- 1 ear sweet corn
- olive oil
- salt
- 1 c. MorningStar Farms® Chorizo Crumbles
- 1 avocado chopped
- 1 large tomato chopped
- 1/2 lime juiced
- 1/4 c. cilantro chopped
- dash of salt and pepper
- 1/2 c. Cotijo cheese crumbled
- 4 brioche buns
Brush the poblano pepper and ear of corn with olive oil and sprinkle with salt.
On a grill over medium-high heat, add the poblano and ear of corn. Cook for 5 minutes and rotate the vegetables. Add the MorningStar Farms® Black Bean Veggie Burgers to the grill and cook for 4 minutes.
Flip the burger and cook for an additional 4 minutes.
Remove the cooked veggies from the grill and cut the corn kernals off the ear and roughly chop the poblano pepper. Add the vegetables to a small bowl along with the avocado, tomato, lime juice, cilantro, salt and pepper. Toss lightly just until combined.
Meanwhile, prepare the MorningStar Farms® Chorizo Crumbles according to the package directions.
Remove the burgers from the grill and plate each burger on a bun. Top each one with 2 Tbsp. cotijo cheese, a 1/4 cup MorningStar Farms® Chorizo Crumbles and 1/3 cup of the vegetable mixture.
Serve immediately with the additional grilled vegetable salsa on the side.
