- 1 5 oz can Bumble Bee® Chunk Light Tuna
- 1 c. quinoa cooked
- 1 egg
- 1 egg white
- 1/4 c. red pepper finely diced
- 1/3 c. green onion chopped
- 1/2 tsp. garlic powder
- pinch of salt
- 1 tsp. fresh dill diced
- 1 Tbsp. lemon juice
- 1/4 c. old-fashioned oats
- Cucumber Salad
- 2/3 c. cucumber
- 2/3 c. tomatoes diced
- 1/3 c. feta
- 1 tsp. fresh dill
- 1 Tbsp. lemon juice
- 1 c. non-fat plain Greek yogurt
In a large bowl, mix all of the patty ingredients until well incorporated. Scoop 1/3 c. of the mixture and form into cakes 2/3" thick. In a large skillet over medium heat, sprayed with non-stick pan spray, cook for 2 minutes on each side.
Meanwhile, toss the cucumber salad ingredients together in a bowl until combined.
Top each cake with cucumber salad and a dollop of Greek yogurt.
