Ingredients

  • 1 5 oz can Bumble Bee® Chunk Light Tuna
  • 1 c. quinoa cooked
  • 1 egg
  • 1 egg white
  • 1/4 c. red pepper finely diced
  • 1/3 c. green onion chopped
  • 1/2 tsp. garlic powder
  • pinch of salt
  • 1 tsp. fresh dill diced
  • 1 Tbsp. lemon juice
  • 1/4 c. old-fashioned oats
  • Cucumber Salad
  • 2/3 c. cucumber
  • 2/3 c. tomatoes diced
  • 1/3 c. feta
  • 1 tsp. fresh dill
  • 1 Tbsp. lemon juice
  • 1 c. non-fat plain Greek yogurt

Instructions

  • In a large bowl, mix all of the patty ingredients until well incorporated. Scoop 1/3 c. of the mixture and form into cakes 2/3" thick. In a large skillet over medium heat, sprayed with non-stick pan spray, cook for 2 minutes on each side.
  • Meanwhile, toss the cucumber salad ingredients together in a bowl until combined.
  • Top each cake with cucumber salad and a dollop of Greek yogurt.
