- 14.5 oz. diced tomatoes with garlic
- 1 1/2 c. whole wheat orzo pasta uncooked
- 1 small onion finely diced
- 1/2 c. white wine
- 1 1/2 c. chicken broth
- 1 tsp salt
- 2 tsp. fresh garlic minced
- 1 lb. raw shrimp peeled, deveined and tails removed
- 2 Tbsp fresh oregano chopped (~or~ 2 tsp dried oregano)
- 6 oz. crumbled feta
- non-fat plain Greek yogurt optional garnish
Preheat your oven to 350°.
In a 9"x13" casserole, mix diced tomatoes, orzo, onion, white wine, chicken broth, salt and garlic until well mixed. Top with raw shrimp, feta and oregano. Bake at 350° for 40-50 minutes, or until pasta is al dente. Serve topped with a dollop Greek yogurt.
