Shrimp & Feta Orzo Bake is a one-dish meal with whole wheat orzo pasta, shrimp and feta for a flavorful and healthy dinner idea. If you are like me and hate doing dishes, a one-dish meal is a dream.

Ingredients

  • 14.5 oz. diced tomatoes with garlic
  • 1 1/2 c. whole wheat orzo pasta uncooked
  • 1 small onion finely diced
  • 1/2 c. white wine
  • 1 1/2 c. chicken broth
  • 1 tsp salt
  • 2 tsp. fresh garlic minced
  • 1 lb. raw shrimp peeled, deveined and tails removed
  • 2 Tbsp fresh oregano chopped (~or~ 2 tsp dried oregano)
  • 6 oz. crumbled feta
  • non-fat plain Greek yogurt optional garnish

Instructions

  • Preheat your oven to 350°.
  • In a 9"x13" casserole, mix diced tomatoes, orzo, onion, white wine, chicken broth, salt and garlic until well mixed. Top with raw shrimp, feta and oregano. Bake at 350° for 40-50 minutes, or until pasta is al dente. Serve topped with a dollop Greek yogurt.
