Ingredients

  • 1 box spaghetti or angel hair pasta
  • 1/2 c. butter
  • 2 tsp. garlic
  • 1/4 c. white wine
  • 2/3 c. crumbled bacon
  • 1/4 c. grated Parmesan
  • 4 oz. chevre soft goat cheese,
  • 1/4 c. balsamic reduction

Instructions

  • Cook the pasta according to the directions.
  • Meanwhile, in a small saucepan, add the butter and garlic. Allow to cook for 2-3 minutes and add the white wine. Continue cooking for an additional 2 minutes.
  • Add the bacon to the butter mixture and cook just until the bacon is heated through. I actually used pre-packaged bacon pieces for this to keep it quick and simple. By cooking the bacon in the butter for a couple of minutes, it infuses the entire dish with the rich bacon flavor.
  • When the pasta is done cooking, strain and return to the pot. Toss with the bacon and butter mixture so it is well coated. Break the soft goat cheese into small pieces and add it to the pasta along with the Parmesan. Lightly toss the pasta so everything is combined.
  • Serve the pasta immediately and allow each person to dress their own pasta with balsamic reduction.
