Ingredients

  • 1 Tbsp. olive oil
  • 1 small onion diced
  • 1 small jalapeño diced
  • 1 lb. 93%-96% lean hamburger
  • 1 packet taco seasoing
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1 pint cherry tomatoes quartered
  • 48 oz. chicken broth
  • 12 oz. tomato sauce
  • 1/3 c. cilantro chopped
  • 1 c. non fat plain greek yogurt
  • avocado for garnish
  • whole grain chips for garnish

Instructions

  • In a large pot, add the olive oil and saute the onion, jalapeño and hamburger over medium-high heat for 2 minutes. Add the spices and tomatoes and cook for 2-3 more minutes. Add the chicken broth, tomato sauce and cilantro and cook for an additional 8 minutes.
  • Stir in the Greek yogurt and serve topped with avocado and whole grain chips.
