Buffalo Chicken & Quinoa Veggie Bowls
Buffalo Chicken & Quinoa Veggie Bowls are a light and healthy dinner recipe loaded with wholesome vegetables and grains, shredded chicken tossed in spicy buffalo sauce and bleu cheese crumbles for amazing flavor!
Servings: 1 bowl
- 3 oz. cooked quinoa
- 3 oz. shredded rotisserie chicken
- 2 Tbsp. buffalo sauce
- 2.5 oz. cherry tomatoes
- 1 oz. chopped celery
- 1/2 avocado
- 0.5 oz. bleu cheese
- lime wedges
Toss the chicken in the buffalo sauce. Heat in the microwave for 30 seconds if you prefer your chicken warm.
Add one ingredient at a time to your bowl on your EatSmart Precision Digital Kitchen Scale. After each addition tare the scale to zero and add the next ingredient. Continue until you have added everything.
Serve with lime wedges.
