Easy Pork Carnitas Rice Bowls

  • 3 c. pork carnita with 3/4 c. liquid
  • 1 1/3 c. cooked brown rice
  • 1 1/3 c. pico de gallo
  • 1 c. guacamole
  • 1/2 c. queso fresco crumbled
  • 1/2 c. salsa verde


  • In a hot skillet over medium-high heat, add the olive oil and shredded pork. Allow to sear for 2 minutes and then add the reserved carnitas juices to the pan. Saute for 3-5 minutes or until the juices are evaporated and the bottom of the pork is browned.
  • Arrange 1/4 of the meat in each of 4 bowls. Divide the remaining ingredients among the bowls and serve immediately!
