Crostini
- 1/2 loaf crusty French bread
- olive oil
- flaky sea salt
Whipped Bleu Cheese
- 4 ounces cream cheese
- 4 ounces Bleu cheese
Apples & Bacon
- 1 Tbsp. lemon juice
- 2 apples
- 6 slices cooked bacon crumbled
- lemon juice
- fresh thyme
Crostini
Preheat oven to 350°F.
Slice baguette into 1/4 inch thick pieces. Arrange slices on a baking sheet. Drizzle pieces of bread with oil and sprinkle with a touch of flakey sea salt.
Bake at 350°F for 8-10 minutes, or until the edges or golden brown.
Remove from oven and allow to cool to room temperature
Bruschetta
Fill a bowl 1/3 full with cold water and add a few tablespoons of lemon juice. Chop the apples into 1/4 inch pieces and add to the lemon water.
Drain the water off the apples when ready to assemble.
Top each cooled crostini with a tablespoon of whipped bleu cheese, 2 tablespoons chopped apples, crumbled bacon and a tiny sprinkle of fresh thyme leaves.
Arrange on a platter and store refrigerated for up to an hour. Serve at room temperature and enjoy!
