Cheesy Dorito Veggie Casserole

Ingredients

  • 1 teaspoon olive oil
  • 1 cup red bell pepper diced
  • 1 cup yellow bell pepper diced
  • 1 small red onion peeled and sliced
  • ½ cup sweet corn
  • 1 cup cooked rice
  • 1 cup kidney or black beans
  • 3 tablespoons Kalamata olives
  • 2 cups salsa
  • 2 Tablespoons 1 packet taco seasoning
  • 3 cups Doritos chips
  • 8 ounces cream cheese
  • 2 cup grated Manchego cheese

Instructions

  • Preheat the oven to 350°F. Grease a 9x13 inch baking dish.
  • Heat a large deep skillet over medium-high heat with oil. Sauté the bell peppers and onion until tender. Add corn, rice, beans, olives, salsa and taco seasoning. Stir and cook for 2 minute.
  • In the baking dish add half of the tortilla chips. Cover with half of the vegetable and rice mixture.
  • Soften the cream cheese in the microwave or 30-60 seconds. Spread the cream cheese over the rice mixture and top with one cup of Manchego.
  • Top with the remaining rice mixture and top with Doritos and remaining Manchego cheese.
  • Cover with tinfoil and bake for 25 minutes at 350°F. Remove the foil and bake for an additional 5 minutes, until the cheese is nicely browned.
  • Allow the casserole to rest for 5 minutes before serving garnished with cilantro.
