Cheesy Dorito Veggie Casserole

- 1 teaspoon olive oil
- 1 cup red bell pepper diced
- 1 cup yellow bell pepper diced
- 1 small red onion peeled and sliced
- ½ cup sweet corn
- 1 cup cooked rice
- 1 cup kidney or black beans
- 3 tablespoons Kalamata olives
- 2 cups salsa
- 2 Tablespoons 1 packet taco seasoning
- 3 cups Doritos chips
- 8 ounces cream cheese
- 2 cup grated Manchego cheese
Preheat the oven to 350°F. Grease a 9x13 inch baking dish.
Heat a large deep skillet over medium-high heat with oil. Sauté the bell peppers and onion until tender. Add corn, rice, beans, olives, salsa and taco seasoning. Stir and cook for 2 minute.
In the baking dish add half of the tortilla chips. Cover with half of the vegetable and rice mixture.
Soften the cream cheese in the microwave or 30-60 seconds. Spread the cream cheese over the rice mixture and top with one cup of Manchego.
Top with the remaining rice mixture and top with Doritos and remaining Manchego cheese.
Cover with tinfoil and bake for 25 minutes at 350°F. Remove the foil and bake for an additional 5 minutes, until the cheese is nicely browned.
Allow the casserole to rest for 5 minutes before serving garnished with cilantro.
