Orange Ginger Chicken Pasta Salad

- 8 oz. Orzo pasta half box
- 2 cups shredded chicken 8 ounces
- 15 ounce can Mandarin Oranges in juice no sugar added
- 1 cup sugar snap pea pods
- 1/3 cup sliced almonds
- 1/2 cup green onions
- 1 cup Orange Ginger Vinaigrette
- salt
Cook pasta according to the package directions. Rinse in a mesh strainer and rinse with cold water. Toss with a generous drizzle of olive oil.
In a skillet over medium heat, add the almonds along with a drizzle of olive oil. Cook for 2-3 minutes until they are light golden brown. Remove from the heat and add to a large bowl.
While the pasta is cooking, chop the sugar snap peas and green onions. Add to the bowl along with the chicken and mandarin oranges.
Add the pasta to the bowl and toss with the orange ginger vinaigrette. Season with additional salt. (salt will depend on how seasoned your chicken is)
Serve at room temperature or chilled. Store leftover salad in an airtight container for up to 5 days in the refrigerator.
