This easy Orange Ginger Chicken Pasta Salad is a fresh and healthy recipe filled with crunchy sugar snap peas, almonds, mandarin oranges and tossed with a homemade orange ginger vinaigrette for a filling lunch or wholesome side dish.

Ingredients

  • 8 oz. Orzo pasta half box
  • 2 cups shredded chicken 8 ounces
  • 15 ounce can Mandarin Oranges in juice no sugar added
  • 1 cup sugar snap pea pods
  • 1/3 cup sliced almonds
  • 1/2 cup green onions
  • 1 cup Orange Ginger Vinaigrette
  • salt

Instructions

  • Cook pasta according to the package directions. Rinse in a mesh strainer and rinse with cold water. Toss with a generous drizzle of olive oil.
  • In a skillet over medium heat, add the almonds along with a drizzle of olive oil. Cook for 2-3 minutes until they are light golden brown. Remove from the heat and add to a large bowl.
  • While the pasta is cooking, chop the sugar snap peas and green onions. Add to the bowl along with the chicken and mandarin oranges.
  • Add the pasta to the bowl and toss with the orange ginger vinaigrette. Season with additional salt. (salt will depend on how seasoned your chicken is)
  • Serve at room temperature or chilled. Store leftover salad in an airtight container for up to 5 days in the refrigerator.
