Ingredients

Greek Shrimp

  • 10 ounces shrimp peeled and deveined
  • 2 teaspoons Greek spice blend
  • Salt

Salad

  • 4 cups mixed greens
  • ½ cup cooked quinoa
  • ½ red bell pepper diced
  • ½ yellow bell pepper diced
  • 1 large cucumber sliced
  • ¼ cup black olives sliced
  • 1 small onion peeled and sliced
  • 1 cup grape tomatoes quartered
  • ¼ cup feta cheese crumbled
  • ¼ cup parsley chopped

Lemon Garlic Vinaigrette

  • 3 Tablespoons olive oil
  • Juice of one lemon
  • 1 Tablespoons white wine vinegar
  • 1 Tablespoon honey
  • 2 garlic cloves minced
  • pinch of salt and pepper

Instructions

  • ShrimpHeat a skillet with a drizzle of olive oil on medium heat. In a small bowl, season the shrimp with salt, and Greek spice blend.
  • Cook the shrimp for 1 minute on each side until they are no longer translucent and turn pink in color. Cooking time will depend on the size of the shrimps.
  • SaladIn a large salad bowl, add lettuce, quinoa, bell peppers, cucumber, olives, tomatoes, feta, parsley, onion and cooked shrimp.
  • Lemon VinaigretteIn a small bowl, whisk the vinaigrette ingredients. Pour over the salad and toss to combine. Add additional lemon juice to the salad as desired. Enjoy!
