Marinated Lamb Chops

Marinade
- ¼ cup olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon smoked paprika
- 2 teaspoons fresh rosemary finely chopped
- 3 garlic cloves minced
- ¼ teaspoon ground black pepper
- Salt to taste
In a large shallow dish, stir together olive oil, lemon juice, rosemary, garlic, smoked paprika, salt and pepper. Add the lamb chops and turn to coat in the marinade. Cover the dish with plastic and let marinate for 30-60 minutes at room temperature.
Preheat your oven to 375°F.
Line a baking sheet with aluminum foil and top with a cooling rack. Arrange the marinated lamb chops in a single layer on the rack.
Bake at 375°F for 12-15 minutes or until the internal temperature reaches 130°-135°F for medium-well doneness. Broil under the broiler for the last 3 minutes on medium heat to caramelize the tops if desired where they will reach an internal temperature of 140°F.
Allow the lamb chops to rest for 5-10 minutes before serving with herb butter and lemon wedges.
