Fried Mashed Potato Balls

These delicious Fried Mashed Potato Balls with a crispy Panko breading are filled with garlic, chives and cheesy leftover mashed potatoes for the perfect appetizer for your next holiday gathering or dinner party. You can even make them in the Air Fryer!

Ingredients

  • 2 ½ cups mashed potatoes
  • 1/4 cup minced red onion
  • 2 tablespoons chives diced
  • 2 garlic cloves minced
  • ¼ teaspoon cayenne pepper
  • ½ cup shredded sharp white cheddar cheese
  • 2 eggs beaten
  • 1 ½ cup panko bread crumbs
  • Oil for frying

Instructions

  • In a large bowl, combine mashed potato, onion, chives, garlic, cayenne pepper and cheddar. Stir all together to combine well.
  • Beat egg in a shallow bowl.
  • Add panko bread crumbs in another bowl.
  • Use a cookie scoop to scoop mashed potato balls into 1 1/2 inch balls. Roll into a ball with your palms.
  • Dredge the ball in egg then in panko bread. Place on a plate. Repeat the until no more mashed potato mixture is left.
  • Heat oil on medium high heat. Test the oil to see if it is ready (360F) by placing the end of a wooden spoon in the oil. If it bubbles around the spoon, it is ready.
  • Fry a few potato balls at a time in the oil until golden on all sides. This will go very quickly, so keep a close eye on in. Don't overcrowd the oil with too many potato balls.
  • Carefully remove the balls with a slotted spoon and place on a paper towel to drain any excess oil. Season with salt and pepper immediately if you'd like.
  • Serve hot with your favorite dip.

Notes

If you have some leftover bacon, crumble it up and add it into the mashed potato mixture.
