These easy Smoked Vegetables made in the Traeger are the perfect side dish recipe with zucchini, squash, carrots, onions and bell peppers seasoned with garlic and paprika and smoked on low to infuse them with amazing smoky flavor.

Ingredients

  • 2 Zucchini
  • 1 yellow Squash
  • 1 white Onion
  • 3 Bell pepper
  • 1 bunch asparagus
  • 3 carrots

Marinade

  • ¼ cup extra virgin olive oil
  • 1 Tablespoon minced garlic
  • 1 Tablespoon smoked paprika
  • 2 teaspoon salt
  • 2 teaspoon pepper
  • 2 teaspoon onion powder

Instructions

  • Preheat electric smoker to 180F.
  • Slice the carrots into ¼” thin strips that are 2-3 inches long. Cut the onion, bell peppers, zucchini and squash and into slightly wider sections to prevent burning or overcooking. Break the tough ends off the asparagus stems and leave whole.
  • Combine olive oil, garlic, paprika, salt, pepper, and onion powder in a small bowl. Toss the vegetables thoroughly with this mixture. You can let the vegetables marinade for up to 12 hours, or place straight on the smoker.
  • Arrange the vegetables into a grill basket or on a baking sheet. Place into the smoker and smoke for 1 hour at 180F.
  • Check to be sure veggies are tender before removing by using a fork. If it easily slices through, the veggies are ready.
  • Cooking times may vary so be sure to check on them periodically! If the vegetables aren't done, crank the temperature up to 375F and cook for 5-10 minutes until they are tender.
