- 3-4 sweet potatoes
- 2 Tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2-3 rosemary sprigs
Preheat oven to 400º F.
Cut the sweet potatoes into ¼ inch thick slices.
With cookie cutters or a paring knife, carefully cut the slices into pumpkin shapes and carve out faces.
Arrange the pumpkins on parchment lined baking sheets. Drizzle with olive oil and sprinkle with salt, pepper, onion powder, garlic powder and rosemary.
Bake at 400º F for 45 minutes or until the sweet potatoes are tender throughout. Allow to rest for 5 minutes before serving. Enjoy!
