Ingredients

  • 3-4 sweet potatoes
  • 2 Tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2-3 rosemary sprigs

Instructions

  • Preheat oven to 400º F.
  • Cut the sweet potatoes into ¼ inch thick slices.
  • With cookie cutters or a paring knife, carefully cut the slices into pumpkin shapes and carve out faces.
  • Arrange the pumpkins on parchment lined baking sheets. Drizzle with olive oil and sprinkle with salt, pepper, onion powder, garlic powder and rosemary.
  • Bake at 400º F for 45 minutes or until the sweet potatoes are tender throughout. Allow to rest for 5 minutes before serving. Enjoy!
