Cranberry Goat Cheese Sweet Potato Bites

These Cranberry Goat Cheese Sweet Potato Bites are a healthy bite sized appetizer recipe perfect for any party! Roasted sweet potatoes are topped with whipped goat cheese, cranberries and thyme for a wonderful mix of flavors in one easy horderves that can even be made in the Air Fryer or oven!

Ingredients

Sweet Potato Coins

  • 2 large narrow sweet potatoes
  • 2-3 tablespoons of olive oil
  • salt and pepper

Whipped Thyme Goat Cheese

  • 4 ounces goat cheese
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon Italian dried spice mix
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Garnishes

  • ¼ cup Dried cranberries chopped
  • OPTIONAL - Fresh thyme sprigs
  • OPTIONAL - Chopped pecans or pistachios

Instructions

  • Roasted Sweet Potato Coins
  • Preheat oven to 425°F.
  • Scrub the sweet potatoes and pat them dry. Do not peel them. Slice the potatoes into 1/2 inch thick coins and place on a baking sheet. Toss with olive oil, salt and pepper and spread them at least 1 inch apart.
  • Bake at 425°F for 15-20 minutes. Flip them over and bake an additional 5-10 minutes until they are crispy on the outside and tender on the inside. Let the potatoes cool on the baking sheet for 5 minutes and then transfer to the cooling rack.
  • Whipped Thyme Goat Cheese
  • Meanwhile, add the goat cheese to a small bowl and microwave for 15-20 seconds until it is softened. Add the fresh thyme leaves, Italian herbs, salt, pepper and the heavy cream. Whip until it is smooth.
  • Once the sweet potatoes have cooled for about 10 minutes, top each sweet potato coin with a tablespoons of herbed goat cheese. Garnish with dried cranberries and additional thyme. Serve at room temperature.

Notes

AIR FRYER Sweet Potatoes

To cook the sweet potatoes in the Air Fryer, add them to an Air Fryer rack and cook at 425°F for 15 minutes. Check the potatoes and add an additional 5-10 minutes until they are cooked through.

Serving

Make within an hour of serving, ideally right before guests arrive. They can be served at room temperature, but sweet potatoes won't hold their nice roasted texture for that long.
