Leftover Prime Rib Pasta in White Wine Cream Sauce

Ingredients

  • 8 ounces penne pasta 1/2 box
  • 1 Tablespoon butter
  • 1 bunch green onions
  • 1 Tablespoon diced garlic
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan
  • 8-10 ounces leftover prime rib about 1 1/2 cups

Instructions

  • Dice the green onions and separate the whites from the greens. Cut the leftover prime rib into 1/2 inch pieces.
  • Cook the pasta according to the package directions until it is al dente.
  • Meanwhile, in a skillet over medium high heat, sauté the whites of the onions in butter for 2 minutes. Season with salt and pepper and add the garlic. Sauté for 1 minute.
  • Stir in the white wine and cook for a few minutes, until it is reduced by half. Reduce the heat to medium and stir in the cream. Cook for a couple minutes, until it thickens just slightly. Taste the sauce and season with additional salt and pepper to taste.
  • Stir in the grated Parmesan and green tops of the onions. Remove the skillet from the heat and add the drained pasta and the leftover prime rib. Stir just until the pasta is well coated and the meat is just warmed through. Serve with additional Parmesan.

Notes

If you don't have Prime Rib, season a steak with some salt and pepper and cook in your skillet until medium rare. Remove the steak and allow it to rest. Add the onions and garlic and the white wine will deglaze the pan and add even more bits of flavor from the cooked steak.
