Ingredients

  • 1/2 lb. lean ground chicken
  • 1/2 apple shredded
  • 1/4 c. onion finely chopped
  • 1/2 head garlic roasted
  • 1/2 tsp. thyme
  • 1/4 tsp. salt
  • 1/2 c. Roasted Garlic & Lemon Dressing
  • 6 c. mixed greens
  • 1 green apple sliced
  • 4 oz. goat cheese soft chevre

Instructions

  • In a medium bowl, mix the chicken, apple, onion, garlic, thyme and salt just until combined and form into 4 patties. In a skillet over medium-high heat, cook each patty for 3-4 minutes on each side until cooked through and no longer pink in the center.
  • Meanwhile, toss the mixed greens with the dressing and divide among 6 plates. Top each salad with apple slices, a burger and goat cheese. Serve immediately.
