Roasted Garlic Butter Swim Biscuits

Ingredients

Roasted Garlic

  • 1 cup salted butter
  • 6-8 cloves garlic

Biscuits

  • 5 1/2 cups flour
  • 3 tablespoons baking powder
  • 1 tablespoon granulated sugar
  • 2 teaspoons salt
  • 4 cups buttermilk

Instructions

  • Preheat your oven to 400°.
  • Add the butter and garlic to a cast iron or oven safe 9x13 pan. Cover and cook for 20 minutes at 400°.
  • Remove the pan from oven and increase the temperature to 450°.
  • Smash the garlic with the back of a fork and whisk into butter. Remove any crispy pieces of garlic.
  • Mix the biscuit dry ingredients in a large bowl and mix in buttermilk just until combined. Do not overwork.
  • Spread the dough over the garlic butter and using a pastry cutter or knife, slice the biscuits into 12-15 pieces.
  • Bake the biscuits at 450° for 20-30 minutes until tops are golden and a toothpick inserted in the center comes out clean.
  • Allow the biscuits to rest for a 5-10 minutes before slicing and serving.
