Cheesy Pizza Rice Muffins

Ingredients

Pizza Rice Muffins

  • 4 cups cooked rice white or brown
  • 2 cups shredded mozzarella cheese
  • 6 ounce bag pepperoni quartered*
  • 2 Tablespoons onion flakes
  • 2 Tablespoons parsley flakes
  • 1/2 teaspoon oregano
  • 2 teaspoons garlic salt
  • 4 eggs whisked
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced olives OPTIONAL

Serving

  • pizza sauce for serving

Instructions

  • Preheat oven to 375°.
  • In a large bowl combine all of the ingredients and mix until well combined.*
  • Divide the mixture evenly between 6 greased muffin cups. Press the mixture into the tins with the back of the spoons.
  • Place the muffin tin on top of a baking sheet and bake at 375° for 16-18 minutes until they are lightly golden brown on the top.
  • Remove from the oven and release from the pan by swiping a butter knife around the edges. Serve with warmed pizza sauce.

Notes

*Microwave the pepperoni in a microwave safe bowl for 1 minute to remove some of the grease before adding to the other ingredients.
