Oatmeal Pancakes

Ingredients

  • 1 c. oats gluten free*
  • 1 3/4 c. almond milk
  • 1 Tbsp. chia seeds
  • 2 Tbsp. brown sugar
  • 1 Tbsp. canola or coconut oil
  • 2 tsp. vanilla extract
  • 1 tsp. baking powder
  • pinch of salt

Instructions

  • In a medium bowl, combine oats, chia seeds, brown sugar, baking powder and salt. Pour milk and oil in the bowl. Mix well with a wooden spoon. If you have difficulty and it's easier for you, you can use a blender to mix the batter.
  • Preheat a pancake machine or a non-stick skillet greased with a bit of coconut oil or oil spray.
  • Pour 1/4 cup of the batter to make 1 pancake. Cook until bubbles form and edges are starting to dry then flip and cook the other side until golden. Serve immediately.

Notes

*Oats are naturally gluten free but due to cross contamination, it can contain gluten. Make sure to get a gluten free ones if you intend for these to be gluten-free.
**You can replace sugar with agave or maple syrup.
