Ingredients

Muffins

  • 5 large very ripe bananas mashed
  • 1 c. butter
  • 1 1/2 c. granulated sugar
  • 2 tsp. vanilla
  • 4 eggs
  • 1 c. sour cream or full fat plain Greek yogurt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 c. flour

Streusel

  • 10 oz. chopped walnuts
  • 1/2 c. granulated sugar
  • 1 tsp. cinnamon

Instructions

  • Preheat your oven to 350°.
  • In a large bowl, mash the bananas. Add the butter and beat until smooth. Add the sugar, vanilla and eggs and mix well.
  • Add the sour cream, baking soda, cinnamon and flour. Mix well and scoop into muffin liners, filling them 3/4 full.
  • In a small bowl, combine the streusel ingredients. Top each muffin with a tablespoon of the mixture.
  • Bake for 25 minutes at 350° or until tooth pick comes out clean.
  • Allow to cool to room temperature and store in an airtight container.
