- 1 small turkey sausage link chopped
- 2 Tbsp. hash browns
- 1/4 c. shredded pepper jack cheese
- 2 Tbsp. pico de gallo
- 1 tsp. fresh cilantro chopped (OPTIONAL)
- 1 egg
Add the sausage, hash browns and cheese to a glass Mason jar. Top with the pico de gallo and fresh cilantro.
Store the prepped jars refrigerated for up to 1 week.
When ready to cook your breakfast, add 1 or 2 eggs to the jar and stir well. Microwave for 30 seconds and give the eggs a quick stir.
Microwave an additional 40 seconds if you are using 1 egg or 60 seconds for 2 eggs.
Carefully remove the jar of scrambled eggs from the microwave and enjoy!
