Turkey Bacon & Veggie Scrambled Eggs

- 1 slice cooked turkey bacon crumbled
- 1 Tbsp. bell peppers diced
- 1 tsp. onion finely diced
- 2 Tbsp. shredded Parmesan
- 1/4 c. baby spinach chopped
- 1 egg
Add the bacon, cheese onion and bell pepper to a glass Mason jar. Top with the baby spinach.Store the prepped jars refrigerated for up to 1 week.When ready to cook your breakfast, tear or chop the spinach on top. Add 1 or 2 eggs to the jar and stir well. Microwave for 30 seconds and give the eggs a quick stir.Microwave an additional 40 seconds if you are using 1 egg or 60 seconds for 2 eggs.Carefully remove the jar of scrambled eggs from the microwave and enjoy!
