Ingredients

  • Juice of 1 lime
  • 1 c. chopped fresh pineapple cut into tidbits size pieces
  • 1 c. chopped tomatoes I used cherry
  • 2/3 c. sweet yellow onion diced
  • ½ c. cilantro chopped
  • 1 jalapeno seeded and diced less or more depending on your spice preference
  • Salt and pepper to taste

Instructions

  • Combine all of the ingredients and refrigerate in an air tight container. Stores well refrigerated for 3-5 days. Serve with chips for a snack or with a grilled chicken breast for a healthy dinner.
