Roasted Squash & Sausage Ravioli
Roasted Squash & Sausage Ravioli is easy weeknight comfort food with roasted butternut squash, onions and bell peppers tossed with sausage ravioli and a butter sage sauce.

- 12 oz. sausage ravioli prepared according to package
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 c. butternut squash cubed in 1/2" pieces
- 1 Red bell pepper diced
- 1 green bell pepper diced
- 1 large yellow onion chopped
- 1/2 c. butter
- 1/3 c. white wine
- 2 Tbsp. fresh sage chopped
Preheat your oven to 400°.
On a lined baking sheet, toss the vegetables with olive oil, salt and pepper. Spread evenly over the pan and bake for 30-40 minutes at 400°.
In a large skillet, cook the butter over medium heat for 4-5 minutes until browned. Once browned, add the sage and white wine and cook for an additional 1-2 minutes.
Add the roasted vegetables and the prepared ravioli to the pan and give it a quick toss. Serve immediately.
