- 1 lb. 94% Lean Hamburger
- 1 Small Onion Diced
- 2 c. Cooked Brown Rice
- 1 1/3 c. Southwestern Corn
- 1.25 cup Taco Cooking Sauce (NOT taco sauce, this is a special cooking sauce near the enchilada sauces and salsa in your Mexican aisle - can substitute 2 c. salsa)
- 1 1/2 c. 2% Cottage Cheese
- 4 oz Chipotle Cheddar Cheese, shredded
- 9 Whole Grain Tortilla Chips crushed
- 1 large tomato chopped
- 2 Tbsp. chives diced
Preheat your oven to 350°.
In a large skillet, saute your hamburger and onion for 5-7 minutes or until the hamburger is no longer pink. Add the cooked brown rice, corn and Taco Cooking Sauce and stir until well combined.
Pour the mixture into a greased 10x10 pan. Over the hamburger mixture, spread the cottage cheese, shredded cheese and tortilla chips.
Bake at 350° for 20-30 minutes, or until the cheese is melted and bubbly. Top with diced tomatoes and chives and serve immediately.
