- 1 Tbsp. olive oil
- 1 small onion diced
- 1 small jalapeño diced
- 1 lb. 93%-96% lean hamburger
- 1 packet taco seasoing
- 1 tsp. cumin
- 1/2 tsp. chili powder
- 1 pint cherry tomatoes quartered
- 48 oz. chicken broth
- 12 oz. tomato sauce
- 1/3 c. cilantro chopped
- 1 c. non fat plain greek yogurt
- avocado for garnish
- whole grain chips for garnish
In a large pot, add the olive oil and saute the onion, jalapeño and hamburger over medium-high heat for 2 minutes. Add the spices and tomatoes and cook for 2-3 more minutes. Add the chicken broth, tomato sauce and cilantro and cook for an additional 8 minutes.
Stir in the Greek yogurt and serve topped with avocado and whole grain chips.
